程涵宇指出,目前的研究證據及專家建議,多吃新鮮及未加工的植物性食物,維持充足水分、減少糖、鹽,幫助預防新冠肺炎的感染及症狀,對於新冠肺炎重症發病率降到最低。
多攝取植物性多酚抗發炎
「抗氧化、抗發炎及抗血栓,絕對是增強保護力的重點。」程涵宇表示,新冠肺炎重症表現出嚴重的身體發炎反應及促進血栓形成的環境,而多攝取植物性多酚可減輕免疫反應,增加抗氧化及身體防禦力,提高血管反應性、減少組織發炎及細胞浸潤,促進身體健康的代謝及心血管健康。
程涵宇說明,蔬果、全谷雜糧、豆類,都有助腸道微生物群調節,加強免疫保護作用,記得每天都要。英國生物銀行也分析了不同食物與新冠病毒的關聯,研究發現吃較多的蔬菜與較低的新冠病毒感染概率相關,也就是蔬菜能幫忙身體抗發炎及抗病毒特性。

吃好油幫護心 一天一把堅果
程涵宇指出,以單元不飽和脂肪酸作為油脂的主要來源,例如:堅果、特級初榨橄欖油、牛油果等油脂,含有單元不飽和脂肪酸、豐富的維他命、礦物質及生物活性植化素成分,幫助促進心臟代謝健康,其中同樣也含有多酚,作為抗氧化和抗發炎發揮核心關鍵作用,建議每天吃一把堅果,烹調用特級初榨橄欖油,一天吃2片牛油果。

程涵宇推薦一道料理「牛油果烤翠玉瓜豆腐沙律」,就能吃到豐富的植物性多酚及好油,幫助抗氧化、增強保護力。
食材:奶油生菜30g、芝麻葉20g、烤翠玉瓜2片、提子5顆、番茄仔5顆、板豆腐3塊、堅果果乾一小把、牛油果1/4顆、水煮蛋一顆。
調味料:橄欖油5ml、巴薩米克醋5ml、現磨黑胡椒適量。
做法:將所有食材放入大碗內,淋上調味料,攪拌均勻即可。
